Baked Oatmeal

Prep time:  5 minutes
Prep notes:
You can prepare the oats ahead and refrigerate until you are ready to bake.
Cooking time:  35 minutes
Yields:  8 people
Ingredients: 

3 tbs unsalted butter, melted
2 c old fashioned oats (I use organic, gluten free oats)
1/2 c walnuts or almonds
1/3 c sweetener (I prefer local, raw honey)
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp sea salt
2 c milk
1 egg
2 tsp vanilla
2 ripe bananas, sliced
1 1/2 c berries (I like dried cranberries and blueberries)

Directions: 

Combine dry ingredients. Layer bananas and berries in bottom of 8″ greased pan. Sprinkle with oats. Pour wet ingredients over oats and fruit. Scatter a few berries and nuts on top. Bake at 350 degrees for 35-40 mins.

Notes: 

What’s really nice about this recipe is that you can completely customize it based on which fruit is in season or your personal preferences. Baked oatmeal is also good with chopped apples, peaches, pears – really any fruit you like. It’s also good with unsweetened flaked coconut instead of the almonds or walnuts.
