I adapted this recipe from one I found on the internet for Asparagus Leek Frittata. I didn’t have the right ingredients, so I modified it and came up with a dish that would be great for breakfast or a  lovely spring brunch! Add some strawberries on the side, and you’ve got a nutritionally complete meal that will keep you satisfied right up till lunch time…

Spring Frittata

8 pastured eggs

1/3 c milk

1 c chopped green onion

1 c steamed asparagus

1 c diced jack cheese

1/4 c grated parmesan

1/2 tsp paprika

Salt and pepper to taste

Cook the asparagus. In a separate bowl, beat the eggs and milk, stir in the green onions, asparagus, cheeses, and spices. Pour into a greased 9″ pie plate. Bake at 350 degrees for 40 minutes. Cut into 8 wedges to serve.
