2 Tbs Coconut Oil
1 Baked Sweet Potato, cubed
3 Turkey Sausage Patties, chopped in bite-sized pieces
1 Red Bell Pepper, diced
1 Onion, diced
2 Cloves Garlic, minced
Salt and Cracked Black Pepper to taste
Sauté bell pepper, onion, and garlic in coconut oil until translucent. Allow to brown slightly. Add sweet potato, sausage and salt and pepper to pan and cook till slightly brown on the bottom.
This dish is fantastic alone, or can be used as a filling for an omelet. Either way, it is amazing and flavorful, and will definitely fill you up until lunch time!
Makes 3 individual servings, but would fill 4-5 omelets.
