I created this recipe out of desperation; I wanted a yogurt parfait for breakfast, but didn’t have the ingredients to make a traditional oatmeal based granola to layer with the yogurt. What came out of my pantry makes a great make ahead breakfast or snack!
Almond Coconut Crumble
1/4 c unsweetened coconut flakes
1/4 c Bob’s Red Mill 10-grain hot cereal, uncooked
2 tbs almond butter
2 tbs coconut sugar
1 tsp cinnamon
Mix ingredients together with a fork until crumbly.
Spoon about 1/3 c Stonyfield organic plain yogurt into a 1-cup glass bowl. Top with 1/2 of the Almond Coconut Crumble, and then layer another 1/3 c of yogurt on top. Top with fresh berries, or make a chia berry jam to spoon over the top. Makes 2 parfaits.
Chia Berry Jam
1/2 c fresh berries (I used raspberries)
1 1/2 tbs chia seeds
Maple syrup or raw honey to taste (I used about 1 tbs of maple syrup since the berries were very sour).
Place ingredients in a small saucepan, heat until syrupy. Turn off heat and allow to cool until the syrup becomes thick. Spoon this mixture over the top of the parfait.
