Avocado Chocolate Mousse

Prep time:  10 minutes
Prep notes:  Use organic ingredients when possible
Cooking time:  0 minutes
Yields:  4 people
Ingredients: 

2 large, ripe avocados
1/4 c raw cacao powder
2 tbs vanilla
1/4 c coconut cream (or 1/2 c raw dairy cream if you do dairy)
Sweetener to taste (great with honey, maple syrup, or stevia)
Whipped cream, berries, nuts, mint, or chocolate shavings to garnish

Directions: 

Process everything together in a food processor or with an immersion blender until light and fluffy.

Notes: 

This is such a decadent treat; your family will never guess it’s healthy! You can make this even fancier by layering mousse in a trifle dish with whipped coconut or dairy cream, berries, slivered almonds, etc. Top with chocolate shavings and mint sprigs. This recipe also works great as a cake or pie filling.
