Cashew Ginger Bark

Prep time:  10 minutes
Prep notes:  Use the best dark chocolate you can find, at least 70% cocoa. I used Lindt, but you can find very high quality organic chocolate online and in health food stores.Buy crystallized ginger online if you can’t find it in a store near you.
Cooking time:  5 minutes
Yields:  16 people
Ingredients: 

1 lb dark chocolate
1 c raw, unsalted cashews
1 c crystallized ginger

Directions:

Prepare a 9×13″ pan by greasing with coconut oil. Then add parchment paper. Do not skip this step as it will be VERY difficult to get the chocolate out of the pan if you do not line it with parchment.

Melt chocolate over low heat in a double boiler, or in a saucepan if you can stir it constantly. Chop your ginger and cashews into small pieces. The ginger is sweet, but it is pretty hot. If you are sensitive to spicy foods, you may want the ginger very finely chopped. Once the chocolate is melted, stir in the cashews and ginger pieces.

Pour into prepared pan. Refrigerate 1 1/2 hours. Once chocolate has hardened, remove from pan and break into pieces.

Notes:

This makes a beautiful gift! Place your bark in a basket or in clear gift bags and tie with a pretty ribbon. Who doesn’t love a gift of gourmet chocolate. Also great for a holiday get together! Your guests will be impressed!
