Ricotta with Marinated Strawberries
This simple dessert is amazing on a hot summer day. It would make a perfect accompaniment to a beautiful frittata and roasted radishes for the perfect brunch menu!
For the Marinated Strawberries –
Combine in a small saucepan:
1/4 c Champagne Vinegar
Juice of 1/2 Lemon
1/4 c Raw Honey
1 tsp Mint Flakes (or 2 tbs fresh mint, finely chopped)
Bring all ingredients to a boil, then let simmer about 5 minutes until mixture is slightly syrupy.
Clean and quarter 1 qt of ripe strawberries.
Pour marinade over berries and allow to sit at least 2 hours.
In a clear dish, scoop 1/2 c ricotta cheese. Top with 1/4 c of marinated berries. Spoon some of the juice over the fruit and ricotta. Top with a small dollop of ricotta or fresh whipped cream if you prefer.
