Quinoa Kale Patties

These patties are delicious as a side to a vegetarian lunch or dinner because of their high protein content, but they also make a fabulous breakfast when topped with a fried, pastured egg!

Quinoa Kale Patties

2 ½ c cooked quinoa

4 c kale, chopped small

3 large eggs

1 tsp salt

½ yellow onion

½ c chopped chives

½ c grated parmesan

2 cloves garlic, minced

½ c bread crumbs

2 tbs olive oil

 

Beat eggs; mix with all other ingredients except olive oil. Form into patties and cook in olive oil until brown on both sides.
