Loaded Turkey Burgers

These burgers are the bomb! The recipe makes a big batch, and all the healthy veggies stretch a pound of ground turkey a long way! The dipping sauce is a fantastic addition, and it will go well with lots of your dishes.

Loaded Turkey Burgers

1 lb ground turkey (I like Empire Brand, but you can use your favorite. Look for organic without added ingredients.)

1 c finely grated/chopped carrot

1/2 c finely chopped mushrooms (I used white mushrooms.)

3 green onions, sliced

1 tbs minced garlic

2 eggs

1 c bread crumbs (make your own or use the brand you prefer, you can substitute gluten-free bread crumbs)

1 tbs cumin

4 tbs parsley

1 1/2 tsp sea salt

1 tsp ground black pepper

Makes about a dozen nice size patties. I haven’t tried freezing them, because we ate them all! However, they seem a litte delicate, so I would advise wrapping each patty individually before storing in a freezer container.

I like to process all the veggies, except the green onions, in the food processor. Mix all ingredients together in a bowl. Drop by large spoonfuls into a frying pan and flatten with a spatula. I reccommend using olive or coconut oil to cook your patties. These only take about 5 mins per side if you have flattened them out well in the pan. Transfer to a plate and serve with the spicy yogurt dipping sauce below! Yumminess!!

Spicy Yogurt Dipping Sauce

1/2 c plain whole milk yogurt (I like Stonyfield Organic plain whole milk yogurt.)

2 tbs lemon juice

1 tbs dill

2 tbs chives

1/2 tsp red pepper flakes

Black pepper to taste

Whisk all ingredients together in a bowl. If your family really likes to dip, you may want to double the recipe. This sauce would be great with raw veggies, roasted cauliflower, or baked sweet potato fries!
