Rosemary Lemon Crockpot Chicken

Prep time:  15 minutes
Prep notes: 
Get your chicken ready the night before so you can just throw it in the crockpot in th emorning. Use fresh, pastured chicken when available.
Cooking time:  300 minutes
Yields:  6 people
Ingredients: 

5 lb roaster chicken
5 cloves garlic
3 sprigs rosemary
1 whole lemon, cut in half
3 c water
2 white onions, chopped in large pieces
1 c celery, chopped

Directions: 

Put the lemon in the cavity of the chicken with some of the rosemary and garlic. Smoosh the rest of the rosemary and garlic under the breast skin. Arrange the celery and onions in the bottom of the crockpot and place the chicken on top. Add the water and cover. Cook on high 3 hours, then turn down to low until you are ready to eat – at least 3 more hours.

Notes: 

You could make this with chicken pieces as well – just put all ingredients in the crockpot together. Reduce the cook time accordingly. This is also wonderful roasted in the oven. Roast at 350 for about 2 hours if using a 5 lb chicken. This is one of my family’s favorite chicken recipes.
