Kale with Canadian Bacon and Green Onions

Prep time:  10 minutes
Cooking time:  10 minutes
Yields:  4 people
Ingredients: 

1 tbs olive oil
1 bunch of fresh kale, cut into bite-sized pieces
3 whole green onions, sliced
3 slices of canadian bacon, diced
Black pepper to taste
Pinch of ground cloves

Directions: 

Heat pan and add olive oil. Add bacon and green onions to pan until slightly browned. Then add kale to pan. Saute for about 5 minutes, then add 1/2 c water. Lower heat and cover. Cook to desired tenderness. Sprinkle with pepper and cloves.

Notes: 

This is a great paleo breakfast dish, served alongside a couple of pastured eggs…also makes a great side for dinner. Love this with quinoa!
