Marinated Strawberry and Avocado Salad
This salad will go well with just about anything you’d like to pair it up with! I think it would be really nice for breakfast or with a side of cottage cheese for lunch. You could also eat it for dessert! I love simple, versatile dishes! The champagne vinegar and lemon juice together creates a brightness that brings strawberries alive!
1/4 c Champagne Vinegar
Juice of 1/2 Lemon
1/4 c Raw Honey
1 tsp Mint Flakes (or 2 tbs fresh mint, finely chopped)
Combine all ingredients in a small saucepan and bring to a boil. Allow to simmer about 5 minutes, until mixture becomes slightly syrupy. Pour over 1 qt of cleaned, quartered strawberries, and let marinate at least 2 hours.
For the salad:
Combine 2 c of marinated strawberries with 1 cubed avocado. Add a few tbs of the marinade and stir gently.
