Fruit Marinade

This tart yet sweet marinade is great on fruit, but is especially delicious with strawberries. Marinated fruit can be used in many ways.

1/4 c Champagne Vinegar

Juice of 1/2 Lemon

1/4 c Raw Honey

1 tsp Mint Flakes (or 2 tbs fresh mint leaves, finely chopped)

Combine all ingredients in a small pan and bring to a boil. Continue to simmer about 5 minutes until mixture becomes slightly syrupy. Pour over prepared fruit and allow to marinate at least 2 hours.
