Mint Tomato Sauce

Prep time:  20 minutes
Prep notes: 
Quick and easy prep for busy weeknights; prepare ahead. Use organic ingredients when possible. Be especially careful with canned tomatoes. Look for non BPA cans.
Cooking time:  20 minutes
Yields:  6 people
Ingredients: 

1 tbs extra virgin olive oil
1 onion, diced
2 cloves garlic, chopped
1/2 c white wine
1 – 14 oz can diced tomatoes
1/2 tsp oregano
1/2 tsp cinnamon
salt and pepper to taste
handful of fresh mint and parsley (1 tbs each, if using dried)

Directions: 

Saute onion and garlic in the olive oil till transparent. Add wine to deglaze the pan. Allow to cook down for 5 mins. Add tomatoes and spices. Cover and simmer 15 mins.

Notes: 

This versatile sauce goes well with lamb meatballs, but is especially delicious over spaghetti squash or roasted eggplant. Sprinkle with a little freshly grated Parmesan for a little extra flavor.
