Sprouted Lentil Soup

2 Tbs Olive Oil
1 Onion, chopped
4 Cloves Garlic, minced
2 Ribs Celery, sliced
1 C Kale Leaves, chopped
3 Carrots, sliced
1 – 15 oz Can Tomatoes, Organic BPA-Free Cans or Glass Jars only
1 – 10 oz Bag Sprouted Lentils
2 Qts Vegetable Broth – I use Pacific brand when I don’t have homemade
Black Pepper to taste
1 Big Pinch of Dried Rosemary or 1 Sprig Fresh

Saute onions, garlic, and celery until translucent. Add other vegetables to the pot, and cover with broth. Add seasonings, and let simmer at least an hour until carrots and lentils are tender and flavors have blended. This is a hearty soup with lots of nutrients, including fiber.
