Summer Garden Explosion Soup

Prep time:  20 minutes
Prep notes: 
This is a great way to use up fresh produce in abundance!
Cooking time:  120 minutes
Yields:  10 people
Ingredients: 

2 qts homemade chicken broth
6 small new red potatoes, cut in eighths
1 med zucchini, cut in bite sized pieces
2 okra pods, sliced
2 green onions, sliced
1 garlic scape, cut finely
2 c green beans (I used leftovers)
10 kale leaves, chopped
3 carrots, sliced

Directions: 

Simmer all the ingredients in a large pot for about 2 hours, or prepare in a crockpot on low for 6 hours.

Notes: 

You can also add some of your leftover chicken if you happen to have any left. If you want a heartier soup, you might want to throw in a handful of brown or wild rice. The nice thing about this soup is that you can mix up your veggies based on what you find available at the farmer’s market, or what you have exploding in your garden!
